British Bubbles! A first for Mineralista. 

The Wiston Estate is a family operation focusing on making high quality British wines with distinct terroir and minimal intervention in the winery. While the Goring Family has tended to this land since 1743, it wasn’t until 2006 that the first vineyard was planted, thanks to Pip. Harry Goring married Pip, a woman who grew up among the vines in South Africa and saw great potential for this English family land, and its similarities with Champagne France. Their 16-acre vineyard is well-situated for ripening, as it is naturally protected from winds, a helpful thing in the typically wet and cool downs near the English Channel.

Grapes: Chardonnay 35%, Pinot Noir 35%, Pinot Meunier 30%

Good to Know: Stainless ferment, aged on lees for 8 months, 20-30% of 2009 reserve wine added at bottling, 2nd fermentation in bottle for 3-5 years, 8 g/l dosage
