Valdibella -- Terre Siciliane 'Zi Bi Bò'

While tradition says to ferment Zibibbo into a sweet wine, this is a unique expression in its dry form. Still just as floral as ever, and not lacking any fruit, just without the sweetness. This wine is totally new to Washington and comes from an organic commune & co-op in Palermo, with only 10 farms as members. Founded in 1998, they knew that alone they would do little, but together they could accomplish something great. So not only do they produce incredible natural wines at an excellent value, they also farm everything from legumes to pistachios, olive oil to honey, and even ancient grains and pastas.
