And when this person chooses a single grape varietal with which to work, and no others, passion is surpassed by something deeper. A true calling. Maura Sarno has done just this; after her career began as a sommelier she turned her soul to the land, and the Fiano grape. Her wines are the many expressions of the same varietal, with their native yeasts doing much of the work to reveal their unique terroir.
