With aging in oak, full malolactic fermentation, and zero filtration, you’d think this Chard would be on the heavy side -- not at all. The care taken to pick the grapes at night when acidity is highest, and then hand-sorting in the vineyard, followed by every possible action taken in the winery to retain balance and acidity, this is a special combination of the best of both worlds, and rare to see from California.
