Domaine Vincent Wengier -- Bourgogne Aligoté
After three generations of winemaking in the northern French region of Chablis, husband and wife team Sophie and Vincent took the reins in 1998. They immediately started the process to return the land to Organic farming standards. The soils here make for exceptional and unique wines, with high and unique mineral content imparting wonderful flavor and texture into the wines. They let the terroir speak for itself here with the use of stainless steel as opposed to oak aging. The malolactic fermentations does just enough to soften things up.

Winery: Ancestral pressing (open press to improve resistance against future oxidation), aged 12 months in stainless on lees, goes through malolactic fermentation
