In 1967, at just 24 years old, Paul Filliatreau took over eight hectares from his father in Chaintres, despite his family insisting viticulture was not an “honourable” profession. Drawn to Cabernet Franc at a time when most in Saumur Champigny were making white or rosé, Paul set out to craft fresh, fruit-driven reds that quickly became the signature style of the estate. Through vision and sheer conviction, he helped elevate Saumur Champigny itself, traveling France as an ambassador and earning spots for his wines on Parisian restaurant tables. With the 1990 purchase of the historic Grande Vignolle site, complete with troglodyte caves carved into limestone, the domaine found its spiritual home. A pioneer of organic farming in the Loire, Paul led Filliatreau through decades of change, and today the 45 hectares are fully organic or biodynamic — a legacy now carried forward by his family.
