Color Collector is the work of Bethany Kimmel, who has been working with Oregon Gamay since 2015, and is drawn to “high-acid, low alcohol wines that make you feel good.” She farms and vinifies gently, relying on native yeast, a traditional basket press, and the natural chemistry of ripe grapes to guide her small but heartfelt productions. The name comes from Frederick, Leo Lionni’s story of a mouse who gathers colors and sunlight to sustain his community through the dark days of winter — a metaphor Bethany embraces, believing wine too can “sustain us with stories.” For her, “color collecting is about noticing the abundance all around us…the small beauties that bring us nourishment and happiness.“
