Pardas is one of my favorite wineries in all of Spain. Their dedication to bringing back to life long-neglected indigenous grape varietals, coupled with total natural winemaking standards, inspires me to seek out equally worthy projects around the globe. It also gives me hope and confidence that natural wine can indeed be made in a delicious, clean, and affordable style.
This is a full-bodied white made from a traditional Cava blending grape. Drinks like a balanced Chardonnay, with all of its natural acidity & minerality shining through.

Region: Penedès, Spain
Farming: Organic, dry farmed, un-ploughed soil, hand harvested, 40 year old vines
Winery: 55% spontaneous fermentation, for 8 months half of the wine is then aged in 500L new French oak and the other half in 1,600L concrete egg, zero additives
