Hermos Corpinnat: Beautiful, Born in the Heart of Penedès
This is Pardas’ first step into producing sparkling wine. After tasting it, who knows why they waited so long! Pay attention to the word ‘Corpinnat’ too – founded in 2017, this is the term for the 11 member organization of farmers who collectively left the Cava designation. Since Cava can be produced in many areas throughout Spain, it really has nothing to do with terroir – origin is important, and with most Cava the terroir isn’t clear or preserved. Not so with Corpinnat; Sparkling wine labeled ‘Corpinnat’ has been farmed within the exclusive Penedès region, is always 100% Organic & 100% produced on the property, and has strict aging requirements. This is not your average Spanish bubs!
Pardas is one of my favorite wineries in all of Spain. Their dedication to bringing back to life long-neglected indigenous grape varietals, coupled with total natural winemaking standards, inspires me to seek out equally worthy projects around the globe. It also gives me hope and confidence that natural wine can indeed be made in a delicious, clean, and affordable style.
Grape: Xarel-lo 69%, Sumoll 31%

Farming: Certified Organic, zero pesticides / herbicides / chemicals, un-ploughed soil, hand harvested, unfined/unfiltered
Winery: Spontaneously co-fermented with wild yeast in stainless, aged 6 months in stainless, 3 years bottle aged, minimal SO2, Brut Nature (zero dosage/sugar added)
