"The underlying idea of organic agriculture is the respect for the soil, plants, man, life in all of its diversity as well as physical, physicochemical and above all ecologic integrity. Less manipulated, a soil will give origin to a more authentic wine, utmost expression of the terroir of the place and of the vine where it was created."
In 2000, Sara and Antonio left their cushy jobs in the city and plunged soul-first into their version of sustainable viticulture and authentic winemaking. For Antonio, this was a return to his birthplace, Mouraz, where his family has been farming vineyards in a holistic and ecological way for generations. While this land has been farmed naturally for many years, they achieved Organic certification in 1997 and have been farming Biodynamically since 2006.
Grapes: A field blend of Touriga Nacional, Tinta Roriz, Jaen, Alfrocheiro, Água Santaand other native varieties
Region: Dão, Portugal
Good to Know: Organic, Biodynamic, 35–40 year old granitic vineyards in Mouraz, hand harvested, ambient ferment in stainless, temperature controlled and aged in stainless through the winter, zero synthetics
