Baldovar 923 -- Cañada Paris Merseguera

Named for its town and elevation of 923 m, Baldovar 923 lies about 100 km from the Mediterranean Sea. This rare, high-altitude site allows the grapes to develop exceptional freshness, aromatic complexity, and mineral character. The property was founded in 1958 and rehabilitated in 2016 into a boutique mountain winery. Perched on ancient limestone and siliceous soils, the vineyards are planted with indigenous grape varieties that reflect the land’s character. The wines are made with minimal intervention, letting the vineyard shine through, and the winery emphasizes sustainability by returning everything it produces—like grape stems, skins, and other organic material—back to the land to keep the soil healthy and the ecosystem in balance.
