Astarbe -- Brut Nature 'ByHur'
Astarbe -- Brut Nature 'ByHur'
Our club’s first cider! And a cult-classic one at that. This is family business at its finest, with a history dating back to 1563. Hur, Joseba, and Kizkitza represent the 15th generation of this unique project. They have recovered ancient planting techniques for their wild seed nursery )makatza). They scavenge wild apple seeds from the surrounding forests, replant them in their orchard, choose which one thrives best, then they graft their own species/variety onto it. This process takes almost 15 years before the tree will bear enough quality fruit for a real cider harvest, but it is the most sustainable way.
