Southwesterly exposed vines trained high above head on pergolas sets the scene for this lovely Pecorino. Relatively young vines still produce a very worthy wine. Fabio Di Donato started this vineyard and winery from scratch in 2013 out of a “passion for nature, respect for traditions and the innate vocation of the area.” He sees his mission through by nurturing indigenous varietals, farming organically, and fermenting with ambient yeasts.
Thanks to lees aging, this wine is such a winner for many palates -- yes, it is bright and lemony with hints of basil and sage, but there is such a delightful creaminess and completely balanced weight on the finish.
